How to make Brussels sprouts more tolerable for the Christmas day feast
Brussels sprouts: the one controversial food item on every Christmas day dinner table
And with the big day just around the corner, Christmas dinner preparations will be in full swing.
But, to make them a bit more tolerable Irish chef Brian McDermott has given us some tips.
Brian thinks the debatable food choice have a hidden quality and describes them as
"little balls of mini cabbage that take on big flavours".
Speaking on Newstalk, Brian gave us a recipe to follow for this years feast.
The recipe involves adding smoked bacon and chestnuts.
He said: “I’m going to admit publicly you need to slightly overcook them. I love the depth and bitterness you get.
- Put the sprouts in boiling water for about 8-10 minutes.
- When they're softened, drain them and then mash them to break them up.
- Add some butter to a frying pan
- Add a pinch of nutmeg and a pinch of pepper to the melted butter
- Add a little bit of bacon or even some of your Christmas glazed ham
- Pour in some cream, and now you've almost got a bas for a casserole
- Toss in chopped chestnuts and some fresh sage leaves
- Bake in the oven at 200 degrees for five minutes
