Viva le Varadero Vibes!
A bartender at The Front Door Pub in Galway is the first ever Galway person to reach the final stages of the prestigious BACARDÍ® Legacy Cocktail Competition.
Aileen Cunningham has been making a splash around Galway City with her signature cocktail creation ‘Varadero Vibes,’ and now she's taking it to Dublin as one of three finalists from around Ireland.
The Legacy Cocktail Competition aims to challenge bartenders from around the world to find the BACARDÍ® rum cocktail with the greatest potential to establish itself alongside old favorites like the Mojito, Daiquirí and Old Cuban before it.
Aileen, who attended the highly acclaimed Dublin Bar Academy, receiving a formal qualification in mixology, said she is thrilled to be one of the finalists.
Speaking of her achievements Aileen says: ‘‘Needless to say I’m thrilled to be a finalist in such a prestigious cocktail competition. 'Varadero Vibes' is a really special drink that I think can become a real industry classic.

So how does one make their very own ‘Varadero Vibes’?
Just grab...
50ml Bacardi cuatro.
50ml watermelon juice.
15ml lime.
10ml agave.
3 dashes mezcal.
4 twists black pepper.
Then shake well and fine strain over ice into a tall slim glass.
Garnish with a watermelon slice and lime zest.
And raise a glass to Aileen!
