How to make sourdough bread

During our isolation, a lot of people are turning to the cooker for comfort and baking up a storm.

One of the most delicious things we can bake is our own bread. Sourdough bread has become very popular over the past few years and proper sourdough made the traditional way is a much healthier, tastier alternative to the sliced pan and it's far easier to digest.

Magico Food is a family-run bakery in Moate, who bake traditional handcrafted Italian sourdough breads and pastries daily with no additive or preservatives. They explain that sourdough is created by using a mixture of flour and water and allowing to ferment over a prolonged period.

This process allows for slow fermentation which produces a natural yeast, which tastes amazing along with the health benefits.

The guys at Magico Food have kindly shared with us this recipe for focaccia:

Magico Food Foccacia

  • 500g flour
  • 300g water
  • 100g sourdough starter (see the video attached on how to make one0
  • 20g olive oil plus extra to taste
  • 10g salt plus extra to taste

Method:

  1. Combine the flour, sourdough and 250g of the water in a bowl. Knead until a dough is formed, then add your salt and olive oil. When you have obtained a soft and smooth textured dough, add the remaining water.
  2. Leave the dough in a bowl and allow to rise for at least 3 hours at room temperature, covering the bowl with a cloth.
  3. Once the dough has risen, rub some olive oil on your hands before removing the dough from the bowl. Flatten the dough and roll it out on to a baking tray. Leave the dough to rise again for another hour at room temperature.
  4. Preheat your oven to 200c. Sprinkle salt and olive oil over the dough and bake in your oven for 15 minutes.
