Six recipes that're worth trying out in the kitchen this week

Getting crafty in the kitchen recently?

If you've found yourself donning the apron and chef hat during isolation, then we've ya sorted.

From foolproof cookies to the simplest but tastiest stir-fry you'll ever make, here's what the iRadio staff have been making in the kitchen over the last couple of weeks.

1. Fruit Scones

"I've been perfecting Mary Berrys fruit scones over the last while. Trust me, if you haven't tasted one of these bad boys you haven't lived. They're so easy to make and mouth-wateringly scrumptious! The link to the recipe is here and I recommend trying one with clotted cream and cherry jam. Drool!"

2. Peanut butter and banana smoothie

"I've been making lots of smoothies during lockdown and experimenting with different ingredients. So far, my favourite one is peanut butter, banana, almond milk and some ice to make it super creamy."

3. A steak stir-fry

Our very own Dave Duke has given his recipe for a simple but scrumptious steak stir-fry saying "this is one of the quickest and tastiest dinners you will make".

Here are the ingredients you'll need:

  • One Sirloin Steak
  • Half a red bell pepper
  • Mushrooms
  • Blue Dragon Oyster and Spring Onion Stir Fry Sauce
  • A packet of straight to wok noodles

And here's how to do it:

  1. Cut up your steak into small pieces (but not too small, leave yourself some bit of bite)
  2. Fry your steak for 6-7 minutes (depending on how well you want it done, but when it's cut up it will cook a lot quicker)
  3. Add in your peppers (once again, cut them into small pieces)
  4. Add in your mushrooms (if you like them)
  5. Give the veg 4/5 minutes to cook
  6. Now time for your sauce... My favourite is the Oyster and Spring Onion but you could do sweet and sour, sweet chilli, even peanut satay if your feeling it. Give the sauce 2-3 minutes to warm up.
  7. Then it's time for the Ready to Wok noodles. Other noodles are fine but you have to cook them first, straight to wok noodles are just too handy. Horse them into ya!
  8. Mix that all up for a couple of minutes and boom! You've just made a class stir fry for yourself!

4. Simple Cookies

"I don't know how many times I've tried to make cookies and failed miserably. They either came out squidgy and uncooked in the middle or firm enough to use as a weapon! Then during isolation, I said I'd try out this recipe from BBC Good Food. They're so easy to make and they're the perfect cookies - crispy on the outside but slighly softer in the middle. They've become such a hit in our house that I'm flat out making two batches a week!"

5. A classic lasagne

"For solid comfort food, I recommend the BBC Good Food classic lasagne. I've perfected it over the last while! Also, any recipe from MacNean House on Instagram is worth a try too over the next while. Two highlights for me have been their Chicken, Rocket and Pine Nut Pasta and their Chocolate Chip Cookies."

6. A quick and easy omelette

"I make a mean omelette. Three eggs, 20g of cheddar cheese, some bacon/ham and a handful of spinach. Cook the bacon first, then add the spinach to the pan. Whisk the eggs in a bowl, throw in some salt and pepper and then add that to the pan too. The key is to keep it on a low heat before finally adding the cheese.  Bone apple feet!"
